I'm all about making simple, tasty wholesome meals with the food I have on hand. In my last post, Grocery Staples Every Kitchen Needs, I provided you with a list of my grocery shopping staples to keep on hand to make nutrient-rich meals. Don't worry if you don't have the exact ingredients for this recipe. As long as you have cooked quinoa, beans, and some veggies you enjoy eating, you're good to go! I usually cook 2 cups quinoa at the beginning of the week to pair with a protein and veggie to make a wholesome meal.
This Quinoa Salad is probably one of the easiest meals I've ever made, is naturally gluten-free, and is a great option for anyone looking for a wholesome vegan/vegetarian recipe (just omit the baked chicken)! If you have extra veggies in the fridge that you'd like to use up this is the perfect recipe to add them to. When I was testing this recipe I had some extra celery and chopped it up to add some texture and flavor to my meal.
Simple enough right? I love adding quinoa to my meals because it's a great source of plant-based protein and is super versatile. This Quinoa Salad is also great for stretching out your food budget and it stays fresh in the fridge for about 3-5 days. I ate my dinner leftovers for breakfast for a few days with cherry tomatoes and goat cheese for a boost of flavor and color! I challenge you to eat your Quinoa Salad leftovers for breakfast!
Pro Tip: Prepare this meal at the beginning of the week and pack left overs for lunch or eat them for breakfast the next morning! If you're trying to eat more nutrient-rich veggies this meal makes achieving your nutrition goals super simple.
