It's finally fall which means it's less than 90F in Houston. We don't get to enjoy the changing seasons as much as other states but that doesn't mean we can't celebrate the weather change with some fall food favorites. As soon as the weather gets a little "cooler" it's time for me to fire up the oven and begin roasting everything in sight. I love making simple snacks that satisfy my cravings for something salty, crunchy, and savory! One of the simplest savory snacks you can make is roasted chickpeas.

RD Tip: This roasted chickpea recipe is a great balanced snack because it provides you with a combination of fiber, carbohydrates, healthy fats, and protein to help keep you full and satisfied! This snack is also a great option for my gluten-dairy-sugar-free and vegan and vegetarian friends.

Rinse canned chickpeas thoroughly to remove excess sodium! Preheat oven to 375 F.

Season chickpeas with avocado oil, salt, pepper, herbs and spices to taste. I like using garlic and cayenne pepper for a little kick!

Carefully place seasoned chickpeas in the oven and bake for 35-45 minutes. I probably should have been wearing oven mits... Check on them to see if they have reached your desired texture/crunchiness. Baking time may vary! 

Some of mine got a little too crispy in the oven but I don't mind. Let them cool down for at least 10 minutes. Enjoy a handful or two of this fiber packed savory snack! Pack them into ziplock baggies for easy grab n go snacks you can keep in your purse or in your office drawer!
